The town of Madrid (pronounced with the accent on the first syllable: MAD-rid, not Ma-DRID (http://www.visitmadridnm.com/) was founded in 1869, but it wasn’t until the 1880’s when the Santa Fe Railroad arrived in the area, that coal mining began on a large scale. By this time, the short lived gold had played out, and most of the solitary miners gave way to larger companies who moved in to develop large coal mining operations.
As many as 1,500 years ago the first Native American inhabitants mined the turquoise and lead deposits in the nearby hills. When the Spaniards first arrived in 1540, they largely ignored the Indians and their turquoise, more interested in finding the more valuable minerals of silver and gold.     I was immediately stunned by it’s weight and heft, and I it helped me make the best ribeye steaks I’ve ever made. Plus I love the horseshoe handles!

    We already had a large disk, but wanted something smaller for when it’s just the 2 of us. This is perfect. Well made and love the handles.

    I see this disc as the perfect size for burgers, hot dogs, eggs and bacon for smaller group ..Same thick construction and durability as my 22 and my 24. Easy to tote and clean too.

    I rarely leave reviews. Southwest Disk is a great company, Great selection, great pricing, and Great people to deal with. I will buy from Southwest Disk again. Thank you for your service........ In one week, 14 cooks on the disc. 18" is perfect for 4-6 people

    Throwing out all my woks

    I am so glad I took a chance and ordered this discada! The 18" is plenty big for my patio gas wok cooker and the ease of cooking is unbelievable! Clean up is easy too - I just wipe it with a paper towel and I'm done. If I cook something particularly messy, after cooking, I just add a cup of water, boil it and then wipe it out. I'm also glad I got it with the Angel Fire handles as they keep my hands farther away from the heat. And the trivet is as beautiful as it is functional. I store my discada on its trivet on my bar outside and it's a huge conversation piece when friends come for drinks. I usually end up showing it off and cooking a quick dinner as well. LOL!
