The Legend of Angel Fire & the Enchanted Circle Scenic Byway

The Enchanted Circle Scenic Byway has a taste of everything that's New Mexico. It links the oldest continuously occupied residence in New Mexico, Taos Pueblo, with Angel Fire, which was incorporated in 1986. It is home to the United States' first memorial to Vietnam War veterans. It passes by Elizabethtown, New Mexico's first incorporated town, now a ghost town. Much of the Byway traverses land formerly part of the Maxwell Land Grant, once the largest private individual holding in the western hemisphere.  The circle closes in Taos, entering town on tree-lined Kit Carson Road. What more could a traveler ask than a road that ends at its beginning......

Angel Fireis located in the majestic Moreno Valley in Colfax County, New Mexico, 23 miles east of Taos along the Enchanted Circle Scenic Byway.  The Moreno Valley is a 15 mile long, 3 mile wide, high alpine valley. Surrounding mountains are Agua Fria Peak on the south end of the valley to Baldy Peak at the north end of the valley. Wheeler Peak at 13,161', the highest mountain in the state, forms the northwest boundary of the valley.

The Moache Utes, a nomadic people, gathered in the Moreno Valley in the summer and fall. According to legend, they called the glow against Agua Fria Peak the "fire of the gods." 
When traveling Franciscan friars came through the area, they transposed the name into "the place of the fire of angels."  The mid-1800s would see the arrival of Lucien B. Maxwell and Christopher "Kit" Carson, who would soon coin the phrase "
Angel Fire," in 1845.

n 1954, Roy and George LeBus bought the 9,000 acre Monte Verde Ranch and in 1956 purchased another 14,000 acres, comprising the Cieneguilla Ranch, from the Maxwell Land Grant Company. Ten years after the initial purchase, they decided to develop the property into a resort community. They called the new development "Angel Fire", the phrase that Kit Carson had long ago coined after the old Indian lore.

    It all started with my father in law. He came from Texas to visit me in Michigan and he brought his disk with him. I fell in love with disk cooking from there and decided to buy my own from indisputably, the best disk company online. Southwest Disk! I am in love with this disk!!!!! In just one week I've cooked on it 4 times and it reliably cooks amazing meals that would be hard to make on a stovetop. The 22 inch is a perfect size to make large meals, it cleans beautifully and I'm just very impressed with it. I feel like it will last for my lifetime and probably won't need to buy another but I'm going to recommend these disks to everyone and I cant wait for my father in law to visit again so I can show him that I have the better disk now!     I bought this for my husband's birthday and it was at our house in less than a week. He's cooked 3 meals in 2 days on it already and he loves it. He said it seasons really easily and definitely recommends it!

    I researched several of the most popular cooking disc and found the one made by southwest disc to be the best value and quality of all of them. when it arrived it was exactly what I expected quality built like a tank and beautifully crafted. it reminded me of New Mexico.

    Why did I wait so long to get one of these things; and I almost went with another brand that is much more expensive and not even US made. I have cooked more meals on this thing since I've had it then on anything I have ever owned. Truly versatile. On our 4 day camping trip, all breakfasts and suppers were cooked entirely on the disk. Nice and heavy. I would highly recommend! Ohh, and the shipping was quick.

    My husband has actually taken up cooking! He prepared a couple meals on the discada and then threw me a birthday party, making jambalaya on the discada and served it over rice for 30 people! He cooks breakfast almost daily, turkey bacon and scrambled eggs. The only oil he will use is Avocado, because of it low smoke quality. “Our” discada now sits atop our gas stove, where we prepare nearly every meal....no mess! (Did I say I also have a 24” for camping?). I actually cannot say enough good things about this. It’s great fun to cook one thing at a time and pull it up the side and ultimately mixing it all together as we did with the jambalaya.

    Set up is easy and it's great for cooking for big groups or just for two. You can get creative in the dishes you make and clean up is simple and easy.

    My wife and I cook outdoors a lot. When I saw the 22in. Cooking disc I had to have one. Just received this but already have a propane heating stand this will fit on well. Can't wait to use it !
